What makes good marzipan good

The quality of marzipan is determined by the ratio of almonds to sugar. The more raw marzipan mass, the more intense the almond flavor and the less sweet the result tastes. The raw mass itself consists of blanched almonds, a little water, and a maximum of 35 percent sugar. For the finer quality grades, little or no additional sugar is added.
